At the far northern edge of Portugal’s Douro Valley, the hills are too steep for machinery to reach. At Quinta Zimbro da Morena, every olive is handpicked at peak ripeness.
The oil is cold-pressed within four hours of harvest, before oxidation can begin. The result is an extra virgin olive oil with just 0.2% acidity. Rich in polyphenols, ranging from 350 to 600 mg/kg alive with flavour, and fully traceable to a single valley.
Polyphenols are the natural compounds responsible for many of olive oil’s celebrated health benefits.
